
Sautéed Edamame Salad

This super easy and tasty salad is the perfect side dish for any gathering or it can be a delicious quick lunch. The freshness and crunchiness of the salad, paired with the salty sautéed edamame is definitely a must try.
Edamame are rich in plant based proteins, Vitamin B and C, iron and calcium. They’re also a great source of healthy fats and folate, which may help relieve depression.
Ingredients for the salad:
1 head green leaf lettuce
1/2 head radicchio
Juice of 1 lemon
2 tbsps extra virgin olive oil
Salt to taste
1 tsp hemp seeds
Ingredients for the edamame:
100g frozen or fresh edamame
1 tbsp extra virgin olive oil
2 crushed garlic cloves
1 tbsp soy sauce
Instructions:
1- Sauté the crushed garlic in a nonstick pan with the oil
2- When it’s golden and fragrant, add the edamame and cover with a lid
3- Cook at medium heat for 10 minutes stirring occasionally
4- Turn the heat up and add the soy sauce
5- Let the edamame caramelize in the sauce before turning off the heat
6- Start assembling the salad washing the lettuce and radicchio and roughly chop it
7- Season it with the olive oil, lemon juice, hemp seeds and salt. Mix it all until well combined
8- At last, add the warm edamame and serve.
